Laetiporus gilbertsonii is a delicious gourmet mushroom commonly referred to as Chicken of the Woods. It grows in Oregon on hardwoods in urban and agricultural settings in the Willamette Valley. Namely, flowering dogwood and plum trees.
It can be identified by its Colby Jack cheese coloration - a marbled yellow and orange color on the shelves and inner mushroom tissue.
The texture can be less than desirable to some. I prefer pulverizing it to a powder in a coffee grinder. Then we add it to ramen, soup, stews and gravy. It makes a great gluten-free thickener.
The flavor is out of this world and it is entirely possible to enjoy this mushroom without having to endure their tough texture.
