This is a fun one. Pleurotus ostreatus, the Pearl Oyster, is a high yield and fast year-round mushroom. I've been working with these commercial genetics for a few years now and have focused on speed, number of fruits and appearance. They've come a long way and I'm very proud of my work.
Though they prefer hardwoods, they will grow on supplemented conifer fuel pellets. They can tolerate a wide range of temperatures and taste delicious.
