The Blue Oyster mushroom - Pleurotus ostreatus var. columbinus - is an all-weather mushroom. It is fast and produces a large yield. In the colder months, it forms massive and monstrous fruits. It can freeze and continue growing.
Although it is called the Blue Oyster, it changes color depending on temperature. There is a very narrow range when the pins are baby blue and fruits bluish. In winter, it can be grey-brown. In spring and fall it is varying shades of grey. It can become pure white in summer heat and sun.
It is an all-around fantastic mushroom and one of our most favorite to grow throughout the year.
